I love pancakes, I like this recipe for pancake mix for several reasons.
1.) It makes it much easier to make small batches of pancakes
2.) It is much cheaper, healthier than Bisquick mix . . . not to mention better tasting.
3.) It makes making pancakes easier, although, for me, this is not much of a time-saver.
I do play with the recipe a lot. I don't use Splenda, nor any other sweetener. This makes them somewhat healthier and I just don't miss the sweetener component. I freely leave out anything I don't have (like brown rice flour). Also, I use 50% regular whole wheat flour and 50% regular all-purpose white flour instead of the WW pastry flour.
I don't add the powdered buttermilk. When I go to make the pancakes I use either half milk/half yogurt (either 50% NF fruity yogurt or just plain and 50% milk OR actual buttermilk). It just depends on what we have in excess/what's on sale.
I also don't add any butter. I do fry them in a small amount of oil.
Other than that I follow the recipe. Well, okay, I do make a few other changes, but I do use it as a guideline. |
